Description

A refreshing and vibrant Greek Cucumber Tomato Salad featuring crisp cucumbers, juicy cherry tomatoes, and a tangy homemade dressing with olive oil, red wine vinegar, and herbs. Perfect for a light, healthy side dish or a quick snack.

Ingredients

Scale

Salad

  • 1 English seedless cucumber, cut in half and thinly sliced
  • 12 oz. cherry tomatoes, cut in half
  • ½ cup red onion, thinly sliced
  • 1 Tbsp. fresh parsley, finely chopped

Dressing

  • ¼ cup olive oil
  • 1 ½ Tbsp. red wine vinegar
  • 1 tsp. honey (optional)
  • 1 clove garlic, finely minced
  • ¼ tsp. oregano (dried)
  • ¼ tsp. basil (dried)
  • ¾ tsp. salt (to taste)
  • ¼ tsp. black pepper (to taste)

Instructions

  1. Combine salad ingredients: In a large bowl, add the sliced cucumber, halved cherry tomatoes, thinly sliced red onion, and finely chopped fresh parsley. Gently mix to combine all the fresh vegetables evenly.
  2. Prepare the dressing: Add the olive oil, red wine vinegar, honey (if using), minced garlic, dried oregano, dried basil, salt, and black pepper into a high-speed blender or mason jar. Blend or shake vigorously until the dressing is well incorporated and emulsified.
  3. Dress the salad: Pour the freshly made dressing over the cucumber and tomato mixture. Toss everything thoroughly to ensure all the vegetables are evenly coated with the flavorful dressing.
  4. Serve or chill: You can serve the salad immediately for a fresh crisp flavor, or refrigerate it for 30-60 minutes to allow the flavors to meld and serve chilled. Enjoy this light and healthy Greek-inspired salad!

Notes

  • This salad is best enjoyed fresh but can be stored in the refrigerator for up to 24 hours.
  • Honey in the dressing is optional; omit for a vegan version.
  • Adjust salt and pepper according to your taste preferences.
  • For added texture, sprinkle some crumbled feta cheese or kalamata olives just before serving (optional).
  • Make sure to slice the cucumber and onions thinly to enhance the salad’s tenderness.
