Description

These Healthy Buckeyes are a guilt-free twist on the classic peanut butter and chocolate treat.   • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tsp coconut oil


Instructions

  1. Prepare the filling: In a mixing bowl, combine almond flour, natural peanut butter, salt if needed, maple syrup, and vanilla extract. Mix thoroughly until the mixture forms a smooth, uniform dough.
  2. Shape and chill: Roll the mixture into small, bite-sized balls. Place the balls on a tray and refrigerate for about 30 minutes to firm up and make them easier to coat with chocolate.
  3. Melt the chocolate: In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 20-30 second intervals, stirring in between, until the mixture is completely melted and smooth.
  4. Dip the buckeyes: Remove the chilled peanut butter balls from the refrigerator. Dip each ball into the melted chocolate, covering approximately two-thirds of each ball to create the signature buckeye look. Place the coated balls on a parchment-lined tray.
  5. Final chill: Return the dipped buckeyes to the refrigerator and chill for at least 15 minutes until the chocolate coating sets. Once firm, they are ready to serve.
