Instructions

  2. Prepare Crust: In a blender or food processor, combine the graham cracker crumbs and melted butter. Blend until well mixed, then press the mixture firmly into the bottom of each lined muffin cup to form the crust.
  3. Make Cheesecake Filling: Add cottage cheese, unsweetened plain Greek yogurt, cream cheese, sugar-free maple syrup, egg, baking powder, and protein powder to the blender or food processor. Blend until the mixture is smooth and creamy, ensuring no lumps remain.
  4. Assemble and Bake: Pour the cheesecake filling evenly over the crusts in the muffin tin. Bake in the preheated oven for 38 to 41 minutes or until the cheesecake bites are set and slightly golden on top.
