Description

Delight in the sophisticated flavors of Maple Glazed Apple and Brie Stuffed Chicken. Juicy chicken breasts are stuffed with sweet honeycrisp apples and creamy brie cheese, baked to perfection, and finished with a luscious maple syrup glaze infused with apple cider, garlic, and fresh thyme. This elegant yet easy-to-make dish is perfect for a cozy dinner or special occasion.

Ingredients

Scale

Chicken and Stuffing

  • 4 boneless chicken breasts
  • 1 honeycrisp apple, thinly sliced
  • 4 ounces brie cheese, thinly sliced

Maple Glaze

  • 1 cup apple cider or juice
  • 2 tablespoons pure maple syrup
  • ½ tablespoon minced garlic
  • 1 teaspoon Dijon mustard
  • Fresh thyme, to taste
  • Salt and pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper to prepare for baking the chicken.
  2. Prepare Chicken: Butterfly each chicken breast by slicing it horizontally almost all the way through, then open it like a book. Season the inside of the chicken breasts with salt and freshly ground black pepper.
  3. Stuff Chicken: Layer thin slices of honeycrisp apple and brie cheese inside each butterflied chicken breast, then carefully fold them back together to enclose the filling.
  4. Bake Chicken: Place the stuffed chicken breasts on the prepared baking sheet. Bake in the preheated oven for 25 to 30 minutes or until the chicken is nearly cooked through.
  5. Make Glaze: While the chicken bakes, combine apple cider, pure maple syrup, minced garlic, Dijon mustard, and fresh thyme in a small skillet. Simmer the mixture over medium heat until it thickens to a glaze consistency.
  6. Glaze and Broil: Brush the thickened glaze generously over the nearly cooked chicken breasts. Place them under the broiler for 10 to 12 minutes, or until the chicken reaches an internal temperature of 165 degrees F (74 degrees C) and the glaze is caramelized.
  7. Serve: Serve the stuffed chicken warm with extra maple glaze drizzled on top for extra flavor and moisture.

Notes

  • Be careful not to overstuff the chicken breasts to prevent the filling from leaking during cooking.
  • Use a meat thermometer to ensure that chicken is safely cooked to an internal temperature of 165°F.
  • If you don’t have honeycrisp apples, Fuji or Gala apples are good substitutes.
  • Fresh thyme adds a lovely aroma but can be omitted or replaced with rosemary if preferred.
  • This recipe pairs well with roasted vegetables or a fresh green salad.
