Description

This Roasted Potatoes with Baked Feta and Garlic recipe is a delicious Mediterranean-inspired side dish featuring tender baby potatoes roasted to golden perfection alongside creamy, baked feta cheese. Infused with garlic, oregano, and a hint of crushed red pepper flakes, then finished with fresh lemon juice and parsley, this dish offers a perfect balance of flavors and textures, ideal for any meal.

Ingredients

Scale

Potatoes and Seasoning

  • lbs baby potatoes, halved
  • 5 garlic cloves, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste

Cheese and Oil

  • 8 oz block of feta cheese
  • 4 tablespoons olive oil, divided

Finishing Touches

  • 1 tablespoon fresh lemon juice
  • Chopped fresh parsley for garnish

Instructions

  1. Prepare the oven and potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, minced garlic, dried oregano, crushed red pepper flakes if using, salt, and black pepper until evenly coated.
  2. Arrange potatoes and feta: Spread the seasoned potatoes out on a large baking sheet or an oven-safe dish in a single layer. Nestle the entire block of feta cheese in the center of the dish. Drizzle the remaining 2 tablespoons of olive oil evenly over both the feta and the potatoes.
  3. Roast the dish: Place the baking sheet or dish in the preheated oven and roast for 30 to 35 minutes, or until the potatoes are golden brown and fork-tender, and the feta cheese is soft with slight browning on top.
  4. Mash and finish: Carefully remove the dish from the oven. Using a spoon, gently mash the baked feta to create a creamy texture that mixes with the potatoes. Drizzle fresh lemon juice over the mixture and toss lightly to combine the flavors.
  5. Garnish and serve: Sprinkle chopped fresh parsley over the top for a burst of color and freshness. Serve the roasted potatoes and baked feta warm for the best taste experience.

Notes

  • For extra crispiness, broil the dish for the last 2–3 minutes of cooking but watch closely to avoid burning.
  • You can substitute with crumbled feta if a block is not available, but it may melt faster and become less textured.
  • Adding roasted cherry tomatoes or olives can provide a wonderful Mediterranean twist and additional flavor complexity.
