Instructions
- Prepare the oven and potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, minced garlic, dried oregano, crushed red pepper flakes if using, salt, and black pepper until evenly coated.
- Arrange potatoes and feta: Spread the seasoned potatoes out on a large baking sheet or an oven-safe dish in a single layer. Nestle the entire block of feta cheese in the center of the dish. Drizzle the remaining 2 tablespoons of olive oil evenly over both the feta and the potatoes.
- Roast the dish: Place the baking sheet or dish in the preheated oven and roast for 30 to 35 minutes, or until the potatoes are golden brown and fork-tender, and the feta cheese is soft with slight browning on top.
