Description

These Sourdough Discard Crackers are a simple and delicious way to use up your sourdough starter discard. Crispy, flavorful, and easy to customize with your favorite seasonings, they make a perfect snack or accompaniment to cheese boards and dips.

Ingredients

Scale

Base Ingredients

  • 200 grams sourdough discard (approximately 1 cup stirred and unfed starter)
  • 2 tablespoons unsalted butter (melted)
  • 1/4 teaspoon fine sea salt

Optional Seasonings

  • Flaky sea salt
  • Everything bagel seasoning
  • Sesame seeds

Instructions

  1. Preheat oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper for a non-stick surface and easy cleanup.
  2. Melt butter: Melt the unsalted butter in a mixing bowl and let it cool slightly to avoid cooking the sourdough discard when combined.
  3. Combine ingredients: Stir the sourdough discard and fine sea salt into the melted butter until fully incorporated into a smooth mixture.
  4. Spread mixture: Evenly spread the batter into a thin layer on the prepared baking sheet to ensure the crackers bake uniformly.
  5. Add seasonings: Sprinkle your choice of optional seasonings such as flaky sea salt, everything bagel seasoning, or sesame seeds on top to add extra flavor and texture.
  6. Bake initially: Bake the cracker sheet in the preheated oven for 10 minutes, which helps set the base before scoring.
  7. Score and continue baking: Remove the baking sheet and score the crackers into squares using a pizza cutter to make breaking easier. Return to the oven and bake for an additional 15-20 minutes until the crackers turn golden brown and crispy.
  8. Cool and store: Let the crackers cool completely on the baking sheet before transferring to an airtight container to keep them crisp.

Notes

  • Ensure the sourdough discard is unfed and stirred for best texture.
  • Spreading the mixture thinly is key to achieving crisp crackers.
  • Adjust baking time slightly based on oven variations; watch for golden brown edges.
  • Store crackers in an airtight container to maintain crispness.
  • Experiment with different seasoning blends for variety.
